Green Curry Frittata with Tuna and Mushrooms: The Most Versatile Weekday Meal

A frittata is delicious catch-all for the bits and bobs that are hanging around in your fridge — that last nub of cheese, those spring onions that look like their better days are behind them — they all work magically well in a frittata, especially if there’s a strong conductor to make the flavours sing together in harmony, like the green curry paste in this particular recipe. This umami-packed, spicy frittata is a great starting place, but feel free to add and replace based on what you have on hand. When it comes to the ingredients, it is very much a choose-your-own-adventure, but don’t miss the last step of placing the frittata in a hot oven to get it all golden and glistening on top, taking the everyday one step further.

Green Curry Frittata with Tuna and Mushrooms

Ingredients
5 eggs
1/4 cup tinned tuna, drained
1/2 cup button mushrooms, sliced
1 tbsp green curry paste
handful chopped coriander
1 tbsp oil
salt to taste

Method
Beat the eggs lightly. Add a little salt, keeping in mind that your curry paste is likely to have salt as well.  
Heat the pan on a medium flame. Add the oil and when hot, add the mushrooms and sauté till soft.
Add the tuna along with the green curry paste, half the scallions and sauté till fragrant, about 2 minutes. 
Now add the eggs and give it a quick stir to evenly distribute the tuna and mushrooms. Let the eggs cook till it is almost set. 
Transfer immediately to the oven and let it brown under the broiler until golden. 
Sprinkle with coriander.
Serve immediately.
